    • Our family and artisanal company, which will celebrate its 65th anniversary in 2025, was created by Jeanne Grolière, from an ancestral family of renowned cooks, and her husband.

      It all began in 1960

      In 1960, Jeanne Grolière decided to start making traditional Périgord-style preserves. With limited resources, she cooked recipes inherited from her parents and grandparents in her own kitchen and went to the market every week to sell her small selection. This is how she built up a customer base, and seeing sales increase, she invested, with the help of her husband, in a small canning workshop in their own home.

      Over the years

      As production increased, in 1980 she decided to build a new, larger, and more mechanized factory to cope with the growing sales, fueled by word-of-mouth that had been praising the quality of her products for several years. Initially, she was joined by her eldest son , Jean-Marc, a recent graduate of hotel management school. Together, they experienced the company's commercial expansion and began developing sales at trade fairs and through mail order. Jean-Marc then took charge of production and gradually modernized the manufacturing equipment. Over the years, our company has continued to grow and acquire a reputation for reliability and quality.

      Jeanne Grolière 's second son, Jacques, joined the company a few years ago. Jeanne Grolière passed away in September 2008 at the age of 76.

      Today

      The company is run by his two sons , Jean-Marc and Jacques.


      OUR BUSINESS

      Our profession is above all a passion, that of fine Périgord gastronomy, offered to the widest possible audience while respecting authentic flavors. We are sculptors of flavors.


      We are artisans

      Indeed, we are first and foremost artisans because respect for tradition, authentic flavors and quality has always been our priority and it is thanks to these requirements that we can, today, display our awards received every year and this history of which we are so proud.

      Although more mechanized, our work is above all that of a small team, accustomed to working with respect for craftsmanship, the desire to do well and know-how : knowing, for example, how to properly master the cooking of our preserves and semi-cooked foie gras to guarantee their perfect consistency after cooking and develop their flavors, or how to reduce our Périgueux Sauce for a long time and with finesse.

      Our recipes are made without artificial colors or preservatives. We work exclusively with raw materials from our region and proudly support labels such as "Southwest Foie Gras Duck" and "Périgord Geese." For us, traceability and the quality of our foie gras are paramount. It is with this pursuit of perfection that we regularly create innovative, original, and delicate recipes, such as our foie gras crème brûlée, our duck foie gras with Guérande salt glazed with Pineau des Charentes, or our figs stuffed with duck foie gras and Pineau.

      Our culture is tradition, our challenge is innovation.

      We are Conservators

      At first glance, this word seems to contradict that of craftsman because it evokes in our minds an assembly line work organization, a canning process like that of large production factories.

      In our profession, the term "preserver" perfectly reflects our respect for traditional methods, as it allows us to produce, among other things, Duck Liver Mousse, Duck and Goose Confit, Enchauds (cured meats), Roast Chicken, and our famous and highly original Duck Foie Gras Crème Brûlée, all under the best conditions of hygiene and preservation of quality products, sourced from our local area and culinary tradition. We are also proud to offer you the true flavors of our region with our Périgord Truffles, Porcini Mushrooms from our woodlands, and Chanterelles and Chestnuts from the Périgord Noir, where our town of Le Bugue is located.
      We also offer a selection of the best Caviars from Aquitaine and Périgord from Maisons Sturia and Perle Noire.

      We have 4 shops in Périgord

      We have one location in Sarlat, two in Le Bugue, and one in Les Eyzies-de-Tayac. You can sample our products for free. We also welcome you to our factory in Le Bugue, where we offer a tour, a video about our company and our craft, and a free tasting (also open on Saturdays in July and August). You can also see our geese.

    I went to Sarlat on market day, determined to bring back some foie gras, but I quickly found myself completely lost in the face of the profusion of vendors. The shop assistant offered us a taste of his products and gave us very clear explanations without pushing for a sale. I was able to think for a few days before going to the shop in Le Bugue where we were staying for the holidays. I brought back goose foie gras and confit duck legs. I waited until the end of year holidays to eat them and I was not disappointed, nor were my guests. It was delicious!!
