Rillettes are prepared from duck confit, slowly simmered in its own fat with spices, then manually shredded and mixed with the cooking fat to form a tender and creamy texture. Concerning the Capelo pâté, it is prepared from a mixture of homemade sausage meat and foie gras from Périgord. Carefully canned by us, the slow cooking allows it to have this refined taste. But beyond the production, it is the family spirit that animates our preserves. Each member of the family brings their unique contribution, enriching our work with their talent and creativity right down to the label written by our grandmother.
