After perfecting his art at Le Vieux Logis in Trémolat and gaining valuable experience at Le Centenaire in Les Eyzies, Angel Morales chose Australia to broaden his culinary horizons. It was there, at a French patisserie called La Renaissance, that Angel honed his skills. Back in his native Dordogne, he made his dream come true at the age of 23 by opening the restaurant Capélo. The name, which sounds like a family heirloom, is the affectionate nickname of Angel's grandfather, a passionate duck breeder.
