    • BLACK PEARL CAVIAR: A GOURMET AND IMMERSIVE EXPERIENCE IN THE EYZIES DE TAYAC


      Founded in 1997, Caviar Perle Noire is a key player in the production of caviar and trout roe in Nouvelle-Aquitaine, specifically in the picturesque Périgord Noir. Nestled near the Grottes des Combarelles, the Château de Commarque and the Château de Puymartin, our fish farm enjoys optimal breeding conditions, in the heart of a region rich in history and flavors.


      The Perle Noire Caviar farm, located in a Natura 2000 area, is supplied by the Beune stream, which originates from a spring. Our sturgeon, Acipenser baerii and Acipenser Gueldenstaedtiii, develop in optimal conditions, reaching maturity at around 10 years of age.


      The production of caviar at Caviar Perle Noire is a delicate process. The eggs, carefully extracted, are meticulously sorted according to their size, color, and firmness. Following a rigorous protocol, the eggs are sieved, washed, lightly salted, and then packaged in traditional "Malossol" aging tins of 1 or 1.8 kg. These tins are then kept in a cold room at -2°C for aging, overseen by Anthony, Master Caviar Master. After this meticulous process, the caviar is packaged in small vacuum-sealed tins of varying sizes, ready to be enjoyed by connoisseurs.


      In the heart of the Périgord Noir region, Caviar Perle Noire opens its doors to you for a gourmet and unusual visit.

      Explore the fish farm and discover the methods used to raise sturgeon, these prehistoric fish that are over 250 million years old. Learn about the ancestral techniques of caviar production and delve into its little-known but fascinating history.


      THREE OPTIONS TO CHOOSE FROM (tour & tasting):

      • The Discovery (€25/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 1 caviar, all accompanied by a glass of sparkling wine.
      • The Initiation (€35/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 2 caviars, all accompanied by a glass of sparkling wine.
      • The Connoisseur (€80/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 4 caviars, all accompanied by a glass of sparkling wine and a shot of vodka distilled in Périgord.


      PRACTICAL INFORMATION:

      Guided tours (French and English) lasting 1 hour 30 minutes are available from April 13 to October 30 2026, Monday to Friday, at 10:00 am and 2:30 pm on mandatory reservation at 07 89 00 15 17 and/or emilie@caviarperlenoire.com

      Children under 12 years old benefit from free visits (excluding tasting), under the responsibility of their parents.

      For an optimal experience, remember to equip yourself with good shoes, an umbrella in case of rain, a hat and a bottle of water in hot weather.

    I visited this place in August 2025. It was fascinating! The location is peaceful and unspoiled. The tour provides insight into the lives and breeding of different sturgeon varieties. The tasting allows you to discover products made with passion. The guide is passionate and engaging! It was a wonderful experience.
