A delicious goose foie gras from Périgord

The poultry are all raised on site since they arrive at the farm one day after birth and stay there until their 14th week. Growing in semi-freedom on 6 hectares of grass in the shade of walnut trees, the goslings that become tender-fleshed geese are monitored with particular care until they fledge (8 weeks), the goose being a very fragile animal. Specializing in the production of Périgord goose, the Ferme de Combetenergue offers you:

      • Goose foie gras
      • Goose pâté
      • Confit goose legs
      • Confit goose gizzards
      • Stuffed necks

Want to learn more? Come meet the Fouillade family, who welcome you year-round to their family farm. The tour, including buildings, livestock, and force-feeding, is comprehensive and ends with a visit to the shop to discover the farm's products, from cutting to sale.

Don't hesitate to ask them questions; these passionate farmers also produce AOC Périgord walnuts and asparagus depending on the season.

A delicious duck foie gras from Périgord

Duck is another poultry renowned as one of the region's culinary riches. Raised on site at the Ferme de Combetenergue, they are force-fed and processed in accordance with traditional farm traditions. Discover the farm's duck delicacies such as:

      • Duck foie gras
      • Duck rillettes
      • Duck pâté
      • Duck mousse
      • Confit duck legs

So many gourmet specialties that you'll want to buy everything.

Force-feeding, an ancestral method for obtaining foie gras

This method involves mechanically feeding the poultry one by one to allow them to store fat in the liver, which will become the future foie gras. At the Ferme de Combetenergue, force-feeding is carried out 4 times a day at a specific time with a diet exclusively of corn for 16 to 19 days. You can attend a force-feeding demonstration from Monday to Saturday from 5 p.m. to 7 p.m., but also participate in a free tasting of the products in summer from Monday to Thursday from 5 p.m. to 6 p.m.
