    • His whole childish soul is in his cooking which is like a game, this everyday story that he tells with his team. Often the real secret of pleasure is hidden in the small details which make up the essence of emotions, which are linked to everyday life, or to memories.

Cooking is a gesture of love, in cooking we all know this, nature offers us in terms of taste the known but also the unknown. With his nose in the pans, he looks to the future, techniques are perfected.

He doesn't like certain cooking methods, but fire is the cook's oldest companion. He loves fire!!! That of service, of action, of the pan that quivers with minute cooking, of precise gestures, of foaming butter, of the oven that crisps the skin of the poultry, or roasts the lamb.

In this way of cooking, more rustic , more authentic , we find a vision of whole, voluntary cuisine. The notion of memory is important, it is the reflection of his "culinary library", he understands better today how to use all of this, the cooking tradition of the Great Classics, which you will regularly find on the menu. He likes this way of getting naked, in “Frying Pan”!!!

The first time I ate at La Table du Marché was when my husband and I were house hunting in the region in the winter of 2018. We have since been back many times since then-now that we live in the region. I celebrated my 40th there with some close friends and family a couple years back, I have met friends for lunch there, our first meal out after having our first born was there- with babe wrapped around me. Without fail, I always leave feeling happy. I have never had a bad meal here. The chef is kind, humble. Always pushing himself to elevate his offering. The place is quirky in design, intimate, but lively. It is hard to find restaurants that offer something unique in a region full of duck confit and foie gras mi-cuit… here, you will find touches of regional cuisine, yes of course, but it will always be reworked, redressed, with a different spirit. And it will always feel a bit new and definitely full of spirit. The beverage offering is also literally and figuratively refreshing. It’s one of the few restaurants around that offers true natural wines or even sake on their wine menu! It is a restaurant I always go back to because it always delivers.

Don't hesitate. It's excellent. Discover the shared flavors in the dishes. We chose the weekly menu paired with a Limoux Chardonnay. We'll be back! 🥰

The meal was good, but the presentation was average for a tasting menu. The tasting menu, of course, was full of extras to inflate the bill, and the ingredients were out of season, which is typical of a restaurant like this. Let's talk about the service and the welcome. If you don't enjoy fine dining, you shouldn't work here, especially since I was the only one serving six customers—it's not complicated. When we serve wine, we offer a taste before pouring a glass. A smile never hurts, but it does add wrinkles!
