BLACK PERLE CAVIAR: EXCEPTIONAL EXPERTISE IN THE PÉRIGORD NOIR REGION
Founded in 1997, Caviar Perle Noire is a key player in the production of caviar and trout eggs in Nouvelle-Aquitaine.
The Caviar Perle Noire farm, located in a Natura 2000 area, is fed by the Beune stream, coming from a spring, with water of first category for aquaculture. Our sturgeons, Acipenser baerii and Acipencer Gueldenstaedtiii, as well as our rainbow trout, develop under optimal conditions.
The production of caviar at Caviar Perle Noire is a delicate process. The carefully extracted eggs are meticulously sorted according to their size, color and firmness. Following a rigorous protocol, the eggs are sieved, washed, lightly salted, then packaged in traditional "Malossol" maturing boxes of 1 or 1.8kg. These boxes are then kept in a cold room for refining supervised by Anthony, Master Refiner. After this meticulous process, the caviar is packaged in small vacuum-packed girls boxes of different weights, ready to be tasted by connoisseurs.
The rapid slaughter of fish, carried out according to the ancestral Japanese technique IKEJIME, guarantees exceptional flesh quality and long conservation. From cutting to vacuuming, through smoking with beech wood, the team of Caviar Perle Noire treats the flesh of trout and sturgeon with the utmost care, offering products of great finesse.

VISIT & TASTING
Upon reservation, from Monday to Friday, from May 15 to October 30, 2023, three possible options:
- The Discovery (€25/person): tasting of smoked trout and sturgeon, trout eggs, toasts of creamy trout and sturgeon, toast of caviar butter, 1 caviar, all accompanied by a glass of sparkling wine.
- The Initiation (€35/person): tasting of smoked trout and sturgeon, trout eggs, toasts of creamy trout and sturgeon, toast of caviar butter, 2 caviars, all accompanied by a glass of sparkling wine.
- The Connoisseur (€80/person): tasting of smoked trout and sturgeon, trout eggs, toasts of creamy trout and sturgeon, toast of caviar butter, 4 caviars, all accompanied by a glass of champagne. and a shot of vodka distilled in Périgord.
PRACTICAL INFORMATION
We will be happy to welcome you at the store to advise you. If you wish, we can prepare your order to be picked up in store. Please do not hesitate to contact us.
We will provide you with each purchase an insulated bag with ice for transport, but you can also bring your cooler if you wish.
For fresh whole or filleted trout, the order must be placed before Friday at 5 p.m. We prepare our trout, only on order, on Monday and made available on Tuesday.
