It is with love and above all an incredible passion that Pascal takes over the reins of the Moulin de Maneyrol in February 2025, marking the beginning of an extraordinary adventure which gives a new lease of life to the estate. Located in Pazayac near Terrasson and its magnificent Jardins de l'Imaginaire, it is on the walnut route that this sublime mill stands with its delicious walnut aromas. Discovery, visit and tasting, you will be amazed by the eyes and the taste buds!

The Moulin de Maneyrol, the transmission of true know-how

The story begins with the meeting of a walnut producer in love with his orchards, Pascal, and a self-taught oleologist proud of his amber-colored oil : Charlie le Gallo. Since February 2025, Charlie has passionately passed on his expertise and know-how to Pascal, who happily immerses himself in the scent of walnut oil, helped by his partner Sandra, who supports him in the production of walnuts on his 40 hectares of orchards planted in Saint-Félix-de-Villadeix. These two enthusiasts share a love of artisanal and quality products, since Sandra is also an outstanding master jam maker who concocts delicious fruit stews that can be found at the Moulin de Maneyrol boutique. As you will have understood, quality is the priority of these two friends who invite you to discover (and especially to taste) their culinary gems from the Périgord.

Le Moulin de Maneyrol, an ancestral production that reveals the flavors of the land

The production of walnut oil is a centuries-old tradition preserved by passionate artisans, including Pascal, a meticulous process that preserves the flavors and authenticity of the beautiful walnuts of Périgord. In his small, old-fashioned workshop equipped with a press, Pascal carefully follows every step to obtain a delicious, shiny, amber-colored liquid : walnut oil.


  • Sorting is a crucial step in selecting the most beautiful mature walnut kernels with white flesh and a thin, golden membrane.
  • Grinding begins to separate the solid part from the fat to become a walnut kernel paste.
  • Heating lightly roasts the fruit, which gives the future oil its flavor.
  • The pressing is superb with this fine and delicate oil which flows gently.
  • Filtering and decanting are the final steps before bottling.


At the Moulin de Maneyrol, the heating is gentle to avoid over-roasting the nuts. This precaution preserves all the nuts' natural aromas and nutrients, resulting in a remarkably pure oil.

Le Moulin de Maneyrol, walnuts sublimated from the orchard to the bottle

Just like wine, walnut oil develops a unique flavor palette that evolves depending on the fruit, the technique used, and the quality of the selected nuts. At Moulin de Maneyrol, Pascal places quality before quantity in a rigorous selection of walnut kernels from his 100% Franquette walnut grove with delicate aromas (an old variety), but also from the region's Périgord walnut producers. Rich in fatty acids, Omega 3, Omega 6, fiber, and protein, walnuts are also a wonderful source of vitamins and trace elements whose benefits are found in every drop of walnut oil pressed at Moulin de Maneyrol.


The mill's walnut oil has won numerous medals at agricultural competitions, including a gold medal in 2018 and 2017, a silver medal in 2015 and 2016, as well as a gold medal in 2024 and a silver medal in 2023.

The Moulin de Maneyrol, an exciting visit on the walnut route

Tasting is not enough to fully appreciate the richness of walnut oil produced in the traditional, artisanal way at the Moulin de Maneyrol. Throughout the year, Pascal welcomes you to his mill to share his passion for the craft and the well-kept secrets of making this gastronomic treasure of the Périgord Noir.


  • Nut farming, to begin with, is the production of walnuts in walnut groves. A video shows the work of artisans from harvesting to shelling, before this delicious dried fruit arrives at the mill.
  • In turn, Pascal discusses his job as an oleologist with a demonstration of oil production.


Enjoy a guided tour to discover the ancestral method of producing artisanal and traditional oil, before tasting this marvelous golden liquid with its local aromas.


In summer, a free oil pressing demonstration takes place every day according to the production schedule.

A place of life and meeting, the mill brings together epicureans, oil lovers, passionate cooks and lovers of the Périgord who meet in Pazayac to exchange ideas around their favorite product: walnut oil. Local products are in the spotlight at the Moulin de Maneyrol which offers its production of artisanal walnut oil for sale, but not only:


  • Fresh or dried nuts depending on the season
  • Loose walnut kernels perfect for cooking
  • Vacuum-packed dried fruit bags for ideal preservation of all their flavors
  • Walnut flour and hazelnut flour
  • Hazelnuts and hazelnut oil
  • Fruit stews prepared by Sandra in her workshop Les Délices de Sandra.
