Hugon Castle

Hugon Castle is located at the top of the Pech hill, almost at the doors of Bergerac, it is a very small property, hardly 4 hectares. The Cousy family has cultivated its vines for many generations but the recent revival dates from the beginning of the nineties.

In 2007, Sébastien Cousy, still supported by his father Bernard, took over the vineyards, determined to make his family’s wine the best in the appellation. The reassessment and development of the vineyard’s processes from the vine to the cellar were very beneficial. Their Millésime 2009 is a case in point.

Here the fleshy and juicy merlot grape is completed by the solid cabernets and substantiated by a hint of Malbec. They are carefully harvested at the heart of the vineyard, and then matured in oak barrels for one year.

- Which dishes to choose?

With a velvety structure and a fine woody smell, this wine is best served with meat stews various duck dishes, game such as hare, young boar, roasted or lamb stew, cheeses such as Cantal vieux or Saint-Nectaire...

- When and how to enhance it?

Its constitution allows maturing well over a ten year period. This wine is best served decanted (allow thirty minutes) and at approximately 17°C.
