Although the undisputed star is duck, which can be cooked in a variety of sauces, Périgord also abounds in local produce such as hazelnuts, chestnuts, truffles and porcini mushrooms. For fruit, try Périgord IGP strawberries from April to October. Delicious on toast, rocamadour cheese or cabécou made from goat's milk have a light hazelnut taste.
