Originally from Sarrazac, a small village near Thiviers, Nicolas Cousinou is a young , ambitious chef who has learned his trade alongside the greatest chefs. He has set up his own restaurant in Thiviers, which he did not choose by chance as it is the capital of foie gras in the Périgord Vert region. 40 covers are preferred, creating an intimate place where quality takes precedence over quantity. The cuisine is gourmet and seasonal, delicate and elegant in both its taste and its presentation.

Nicolas is young, but very experienced and he offers you a menu rich in his culinary adventures and discoveries. This gourmet restaurant with traditional yet modern Périgord cuisine offers dishes with seasonal and ultra-fresh products, sourced locally.
