The Espace du 6ème Sens is a real institution in Périgueux, it is here that one comes to smell the fantastic Tuber Melanosporum, the Black Truffle of Périgord, during the winter season when it flushes out in the forests of Dordogne… Because it is precious and Francis Delpey's advice is too! He is a Chef, a gourmet and a passionate professional since 1987: the opening of his first restaurant in Périgueux. Now, it is Place Saint Silain in Périgueux, where he finds gourmets, discerning palates, the curious and all those who place good taste at the heart of their concerns.
The Espace du 6ème Sens is a delicatessen where you can also sit down to enjoy the delights of Périgord. To restore yourself, come and taste the delicious Pâté de Périgueux, an ancestral recipe, which dates from the Middle Ages and consists of foie-gras, pork and truffles. Francis is no less than the Vice-President of the Confrérie du Pâté de Périgueux. At the Espace du 6ème Sens, he offers variations of pâté with walnuts, chestnuts and porcini mushrooms, flagship products from the Périgord region. The truffle is found in all its forms, first the fresh truffle, but also made into special pancakes with charcuterie and as a king bean, a real piece of truffle! We are still going to fight for the crown… Tapenade of truffles, truffled butter… Francis Delpey is also a caterer, after having reserved your dishes (essential), you can pick them up and delight your guests with traditional Périgord recipes, prepared with fresh and ultra local products.
There is food but also drink at the Espace du 6ème Sens, come and discover La Gauloise, a traditional aperitif created in Périgueux before the French Revolution and which was regularly consumed until the 1960s. as a base for preparing cocktails, which Franis Delpey puts La Liqueur La Gauloise in the spotlight (basil cucumber or strawberry + basil + sparkling water).
