We are back again with the “Périgord Attitude”! This time, you are invited for a family dinner, made with the traditional and delicious products of the Perigord. Here are some suggestions for great experiences and delicious dishes served with the Vins de Bergerac Duras.

A great meal made of selected products and served with fine wine 

For my family diner, and to be sure to please my guests, I chose a PGI (Protected Geographical Indication) Périgord organic free range chicken. It has been stuffed before cooking with Label Rouge (Red Label is a sign of quality insurance in France) Périgord chestnuts naturally preserved in jars.

To accompany the chicken, my guests will enjoy some Sarladaises potatoes, deliciously cooked with duck grease, garlic, flat parsley and mushrooms ceps. For the aperitif, goose foie-gras is in the spotlight! Goose foie-gras is a delicacy, rare but also traditional. Geese are farmyards animals which have always been present on Périgord farms. They are not suited to intensive animal farming, and for this reason they are found in small farms and the making the goose foiegras is more expensive. The texture of the goose foie-gras is very silky, soft and fine. It reduces little during the cooking, which make it perfect for paned foiesgras. For my family dinner, I chose a fresh semi-cooked foie-gras, which can be savoured as it is with a pinch of quality salt on toast.


For the dessert, with my children we cooked a delicious apple and walnut crumble. The Périgord Walnut is a high quality product, grown with a very strict specification and enviro mental guidelines. There are 4 varieties: The GrandJean, the Franquette (the most common), the Marbot and the Corne. I chose some kernels of the AOP Périgord Walnut, sold in a vacuum pack for freshness . The beautiful white and honey colour of the kernels is a guaranty of sweetness.


Nathalie’s special recipe: Apple and Perigord Walnut CrumbleCrumble aux pommes

Exclusively for you, I share my apple and walnut crumble;) This recipe is without lactose, gluten, eggs and also vegan, but with lots of taste!


Ingredients:

  • 1 strawberry jam pot from Périgord!
  • 8 oz vegetal margarine
  • 3 cups of Périgord walnut kernels
  • 1 cup of golden sugar
  • 1 cup of corn flour
  • Apples (approximately 10 for a big crumble)

 

Recipe:

  • Cut the apples into pieces
  • Heat the strawberry jam with 1.6 ounces of margarine
  • Mix with the apples, and pour the mixture in an oven dish
  • Crush the walnuts
  • Mix the walnuts with the flour and the sugar, add a bit of water to form a crumbly dough
  • Crumble the mix of flour and walnut on the apples
  • Place in the oven at 180 degrees: first the mix is going to cook and boil, then the crumble becomes golden. Cover with foil paper to protect the crumble from burning.
  • Take out of the oven when the apples are melting. Let it cool down or serve lukewarm with a scoop of vanilla or strawberry ice cream.
